Warm the almond milk to about 38°C (100°F)—just warm to the touch, not hot. Pour it into a bowl and stir in the active dry yeast and 1 tablespoon of the cane sugar. Let the mixture sit for 5-10 minutes until it becomes frothy.
In a large mixing bowl, combine the all-purpose flour, remaining cane sugar, and salt.
Add the frothy yeast mixture, vegetable oil, and apple cider vinegar to the flour mixture. Stir to form a soft dough.
Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Alternatively, you can knead the dough using the dough hook attachment on a stand mixer for 5-6 minutes.
