  • 2 Garlic cloves for tzatziki
  • 180 ml Coconut yogurt (unsweetened)
  • 2 tablespoons Fresh dill (chopped)
  • 15 ml Fresh lemon juice for tzatziki
  • 0.5 teaspoon Salt for tzatziki
  • 150 grams Cherry tomatoes
  • 1 small Red onion
  • 4 Pita bread (dairy-free)
  • 8 Wooden or metal skewers

Directions

Step 1

Cut the chicken into bite-sized pieces (about 2.5 cm cubes).

In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper. Mix well to create a marinade.

Add the chicken pieces to the marinade, ensuring they are thoroughly coated. Cover the bowl and let the chicken marinate in the fridge for at least 1 hour, or up to overnight for more flavor.
