Ingredients

  • 500 grams All-purpose flour
  • 7 grams Active dry yeast
  • 1 tablespoon Granulated sugar
  • 1.5 teaspoons Salt
  • 300 milliliters Warm water
  • 2 tablespoons Olive oil
  • 4 tablespoons Baking soda
  • 1 liter Water (for baking soda solution)
  • 2 tablespoons Coarse salt

Directions

Step 1

In a large mixing bowl, combine warm water, active dry yeast, and sugar. Stir gently and let sit for 5-10 minutes until the mixture becomes frothy.

Step 2

Add olive oil, salt, and two-thirds of the flour to the frothy yeast mixture. Stir until the dough comes together.

Step 3

Gradually add the remaining flour and knead the dough on a floured surface for 8-10 minutes until it becomes smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm spot for 1 hour or until it has doubled in size.

Step 5

Once risen, punch down the dough and divide it into 8 equal portions. Roll each portion into a long rope, approximately 60 cm (24 inches) long, and twist into the traditional pretzel shape.

Step 6

Preheat your oven to 220°C (430°F) and line a baking sheet with parchment paper.

Step 7

In a large pot, bring 1 liter of water to a boil and add the baking soda. Reduce the heat to a simmer.

Step 8

Using a slotted spoon, lower each pretzel into the baking soda solution for about 30 seconds, then remove and let drain on a clean towel.

Step 9

Transfer the pretzels to the prepared baking sheet. Sprinkle each with coarse salt.

Step 10

Bake in the preheated oven for 12-15 minutes or until the pretzels are deeply golden brown.

Step 11

Let cool slightly before serving. Enjoy your dairy-free German pretzels fresh or with your favorite dips!
