Ingredients

  • 2 cups fine cornmeal (flocão de milho or milled corn grits)
  • 1.5 cups water
  • 0.5 teaspoons salt
  • 1 tablespoons extra virgin olive oil
  • 0.25 cups shredded coconut (optional, unsweetened)

Directions

Step 1

In a large mixing bowl, combine the fine cornmeal, salt, and water. Mix well using a spoon or your hands until the cornmeal is evenly moistened but not overly soggy. Allow it to rest for 5 minutes so the cornmeal absorbs the water properly.

Step 2

If desired, stir the shredded coconut into the cornmeal mixture for a touch of sweetness and texture, though this step is optional.

Step 3

Lightly oil the inside of a steaming mold or a couscous steamer (a cuscuzeira, if you have one) with the olive oil to prevent sticking.

Transfer the moistened cornmeal mixture into the mold, gently pressing it down to ensure it’s compact but not too dense.
