Ingredients

  • 2 cups Chickpea flour (besan)
  • 0.5 cup Coconut oil
  • 0.75 cup Jaggery (powdered or grated)
  • 0.5 teaspoon Cardamom powder
  • 2 tablespoons Chopped nuts (almonds, cashews, or pistachios; optional)

Directions

Step 1

Place a heavy-bottomed pan on low heat. Add the coconut oil and allow it to melt completely.

Step 2

Once the coconut oil is melted, add the chickpea flour (besan) to the pan. Stir continuously to ensure the flour mixes evenly with the oil and doesn’t clump.

Step 3

Roast the chickpea flour on low heat for 10–15 minutes, stirring frequently until it turns golden brown and gives off a nutty aroma. Be careful not to let it burn.

Step 4

Once the chickpea flour is well-roasted, remove the pan from heat and let it cool slightly for about 5 minutes. This prevents the jaggery from melting too quickly and creating a sticky texture.

Step 5

After the mixture has cooled slightly, add the grated or powdered jaggery and the cardamom powder. Mix thoroughly to ensure the jaggery combines evenly with the roasted flour.

Step 6

If using nuts, stir in the chopped nuts at this stage for added flavor and texture.

Step 7

Take a small handful of the mixture and press it between your palms to shape it into a round ball (laddu). Repeat with the remaining mixture until all the laddoos are formed.

Step 8

Allow the laddoos to set for 15–20 minutes at room temperature, then store them in an airtight container. They can last for up to 2 weeks.
