Ingredients

  • 16 oz Dairy-free tortellini
  • 1.5 cups Cherry tomatoes
  • 1 Cucumber, diced
  • 1 Red bell pepper, diced
  • 0.25 cup Red onion, finely chopped
  • 0.5 cup Black olives, sliced
  • 0.25 cup Fresh basil, chopped
  • 0.25 cup Olive oil
  • 2 tbsp Red wine vinegar
  • 1 tbsp Lemon juice
  • 1 tsp Dijon mustard
  • 1 clove Garlic, minced
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the dairy-free tortellini according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

Step 2

While the tortellini cools, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and red bell pepper, finely chop the red onion, and slice the black olives.

Step 3

In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, salt, and black pepper to make the dressing.

Step 4

In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, and fresh basil.

Step 5

Pour the dressing over the salad and gently toss to combine, ensuring the ingredients are evenly coated.

Step 6

Taste and adjust seasoning if necessary, adding more salt or pepper to preference.

Step 7

Chill the pasta salad in the refrigerator for at least 30 minutes to meld the flavors before serving.

Step 8

Serve cold or at room temperature. Enjoy your dairy-free tortellini pasta salad!
