  • 1 cup White sesame seeds
  • 0.75 cup Jaggery
  • 2 tablespoons Water
  • 0.25 teaspoon Cardamom powder
  • 1 teaspoon Neutral oil (such as coconut oil)

Directions

Step 1

Step 1: Heat a heavy-bottomed pan on medium heat. Add the sesame seeds and dry-roast them, stirring continuously, until they turn golden and aromatic. This should take about 5-7 minutes. Be careful not to burn them. Once roasted, remove the sesame seeds from the pan and set aside to cool in a bowl.

Step 2: In the same pan, add the jaggery and water. Cook on low to medium heat, stirring often, until the jaggery completely dissolves and begins to bubble. This will take approximately 3-4 minutes.

Step 3: Check the readiness of the jaggery syrup by dropping a small amount into a bowl of cold water. If it forms a firm ball, the syrup is ready. If the syrup remains soft or dissolves, cook it for another minute and test again.

Step 4: Once the syrup reaches the right consistency, reduce the heat to low and quickly add the roasted sesame seeds and cardamom powder to the pan. Mix well to coat the sesame seeds evenly with the syrup.

Step 5: Turn off the heat and grease your palms lightly with the neutral oil. While the mixture is still warm (but not too hot to handle), take small portions and shape them into round laddus using your hands.
