Preheat your oven to 180°C (350°F) and prepare a 9-inch tart pan by greasing it lightly.
In a large bowl, whisk together the all-purpose flour, powdered sugar, and salt.
Add the coconut oil to the flour mixture and rub it in with your fingertips until it resembles fine breadcrumbs.
Add the ice water, one tablespoon at a time, and mix until a dough forms. Do not overwork the dough.
Roll the dough into a disk, wrap it in plastic wrap, and rest it in the fridge for 20 minutes.
After chilling, roll the dough out on a lightly floured surface to fit your tart pan. Transfer the dough to the pan, trim the edges, and prick the base with a fork.
Line the tart shell with parchment paper or aluminum foil and fill it with baking beans or rice to blind bake. Bake for 15 minutes, then remove the paper and beans and bake for another 10 minutes until golden. Allow to cool completely.
To prepare the dairy-free custard, whisk the almond milk, cornstarch, granulated sugar, and vanilla extract in a saucepan over medium heat.
Heat the mixture while stirring constantly until it thickens into a smooth custard (about 5-7 minutes). Remove it from the heat and transfer it to a bowl. Cover with cling film pressed directly onto the surface of the custard to prevent a skin from forming. Let it cool completely.
Wash and hull the fresh strawberries, then slice them in halves or quarters if desired.
Once the tart shell and custard are cool, spread the custard evenly across the base of the tart shell.
Arrange the strawberries on top of the custard in a decorative pattern.
Heat the apricot jam and water in a small saucepan over low heat until it becomes a loose glaze. Using a pastry brush, gently brush the glaze over the strawberries to give them a glossy finish.
Chill the tart in the refrigerator for at least 1 hour before serving. Enjoy your dairy-free Tarte aux Fraises!
