Ingredients

  • 200 g All-purpose flour
  • 50 g Powdered sugar
  • 1 pinch Salt
  • 100 g Coconut oil (solid but slightly softened)
  • 2 tbsp Ice water
  • 300 ml Unsweetened almond milk
  • 30 g Cornstarch
  • 50 g Granulated sugar
  • 1 tsp Vanilla extract
  • 250 g Fresh strawberries
  • 2 tbsp Apricot jam
  • 1 tsp Water

Directions

Step 1

Preheat your oven to 180°C (350°F) and prepare a 9-inch tart pan by greasing it lightly.

Step 2

In a large bowl, whisk together the all-purpose flour, powdered sugar, and salt.

Add the coconut oil to the flour mixture and rub it in with your fingertips until it resembles fine breadcrumbs.

Add the ice water, one tablespoon at a time, and mix until a dough forms. Do not overwork the dough.

Roll the dough into a disk, wrap it in plastic wrap, and rest it in the fridge for 20 minutes.

After chilling, roll the dough out on a lightly floured surface to fit your tart pan. Transfer the dough to the pan, trim the edges, and prick the base with a fork.

Line the tart shell with parchment paper or aluminum foil and fill it with baking beans or rice to blind bake. Bake for 15 minutes, then remove the paper and beans and bake for another 10 minutes until golden. Allow to cool completely.
