Ingredients

  • 100 grams day-old bread (crusts removed)
  • 125 ml almond milk (unsweetened and unflavored)
  • 100 grams salted cod roe or tarama (fish roe)
  • 2 small garlic cloves
  • 30 ml lemon juice (freshly squeezed)
  • 150 ml extra virgin olive oil
  • 30 ml water (as needed)
  • 1 pinch black pepper (optional, for seasoning)

Directions

Step 1

Begin by soaking the day-old bread in almond milk for about 5 minutes until fully softened.

Step 2

Squeeze out the excess almond milk from the soaked bread and place the bread in a food processor or blender.

Step 3

Add the salted cod roe (tarama) to the food processor along with the garlic cloves.

Step 4

Blend the mixture on medium speed until it forms a smooth paste.

Step 5

Add the lemon juice to the paste, blending again until fully incorporated.

Step 6

While the food processor is running, slowly drizzle in the olive oil, allowing the mixture to emulsify and become creamy. If the mixture is very thick, you can add water a little at a time to reach your desired consistency.

Step 7

Taste the taramasalata and season with black pepper if desired. Note that additional salt is likely unnecessary due to the brininess of the roe.

Step 8

Transfer the dairy-free taramasalata to a serving bowl and garnish with a drizzle of olive oil or a sprinkle of fresh herbs, if desired.

Step 9

Chill in the fridge for at least 30 minutes before serving to let the flavors meld together.

Step 10

Serve cool with pita bread, vegetable sticks, or as part of a mezze platter.
