Ingredients

  • 1 pound Ground beef or plant-based ground meat
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Taco seasoning (dairy-free)
  • 1 can (15 ounces) Canned black beans, rinsed and drained
  • 1 can (14.5 ounces) Canned diced tomatoes, with juices
  • 1 cup Frozen corn kernels
  • 1 cup Dairy-free shredded cheddar cheese alternative
  • 2 cups Gluten-free tortilla chips, crushed
  • 2 tablespoons Green onion, thinly sliced (optional, for garnish)
  • 2 tablespoons Cilantro, chopped (optional, for garnish)
  • 0 (as needed) Dairy-free sour cream (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch casserole dish.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and sauté for another 30 seconds until fragrant.

Step 3

Add the ground beef or plant-based ground meat to the skillet. Cook, breaking it up with a spoon, until browned and fully cooked, about 5-7 minutes. Drain any excess fat if necessary.

Step 4

Stir in the taco seasoning, canned black beans, canned diced tomatoes (with their juices), and frozen corn. Simmer for 4-5 minutes to allow the flavors to combine.

Step 5

Spread half of the crushed tortilla chips evenly on the bottom of the prepared casserole dish. Layer half of the meat mixture on top of the chips.

Step 6

Sprinkle half of the dairy-free shredded cheddar cheese over the meat mixture. Repeat the layers with the remaining tortilla chips, meat mixture, and cheese.

Step 7

Bake the casserole in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

Step 8

Remove from the oven and let the casserole cool for 5 minutes. Garnish with sliced green onions and chopped cilantro, if using.

Step 9

Serve warm with optional dairy-free sour cream on the side, and enjoy!
