  • 1 cup Corn kernels (fresh, frozen, or canned, drained)
  • 1 cup Cherry tomatoes (halved)
  • 1 large Avocado
  • 2 tablespoons Lime juice (freshly squeezed)
  • 2 tablespoons Cilantro (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 cups Shredded lettuce
  • 2 tablespoons Hot sauce or salsa (optional, for topping)

Directions

Step 1

Rinse the brown rice under cold water to remove excess starch.

In a medium saucepan, combine the rice, vegetable broth, and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 30 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
