Ingredients

  • 2 cups Baby spinach

  • 1 teaspoon Dijon mustard
  • 1 tablespoon Capers
  • 2 tablespoons Nutritional yeast
  • 2 tablespoons Water
  • 0.75 cup Chickpeas (roasted or plain)
  • 1 cup Dairy-free croutons
  • 0.25 cup Vegan Parmesan (optional)

Directions

Step 1

Wash and dry the kale and baby spinach. Remove the stems from the kale and chop the leaves into bite-sized pieces.
