Ingredients

  • 4 medium (about 2 pounds) sweet potatoes
  • 2 tablespoons extra virgin olive oil

  • 2 medium celery stalks
  • 0.5 medium red onion
  • 2 tablespoons (chopped) fresh parsley
  • 0.5 cup dairy-free mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon maple syrup
  • 0.25 teaspoon paprika

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Peel the sweet potatoes and cut them into 1-inch cubes. Place them on the prepared baking sheet.

Step 3

Drizzle the sweet potato cubes with olive oil, and sprinkle with salt and black pepper. Toss to coat evenly.
