Ingredients

  • 450 grams beef sirloin (thinly sliced into strips)
  • 6 stalks green onions (cut into 2-inch pieces)
  • 3 cloves garlic (minced)
  • 1 tablespoon ginger (minced)
  • 4 tablespoons coconut aminos (or tamari for gluten-free option)
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons avocado oil (or other neutral oil)
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.5 teaspoons red pepper flakes (optional, for heat)

Directions

Step 1

In a medium bowl, combine the beef strips with 2 tablespoons of coconut aminos, the cornstarch, salt, and black pepper. Mix well to coat the beef evenly. Let it marinate for 10 minutes while preparing other ingredients.

Step 2

In a small bowl, mix the remaining 2 tablespoons of coconut aminos with rice vinegar, sesame oil, water, and red pepper flakes (if using). Set it aside as the stir-fry sauce.

Step 3

Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Once hot, add the beef strips in a single layer, cooking for about 2-3 minutes per side until browned. Do this in batches if necessary to avoid overcrowding the pan. Remove the cooked beef and set aside.

Step 4

Add the remaining tablespoon of avocado oil to the skillet, then stir in the minced garlic and ginger. Cook for about 30 seconds until fragrant, being careful not to burn them.

Step 5

Add the green onion pieces to the skillet and stir-fry for 1-2 minutes until they are tender, but still crisp.

Step 6

Return the cooked beef to the skillet with the green onions, and pour the prepared stir-fry sauce over everything. Toss everything together and cook for an additional 1-2 minutes until the sauce thickens slightly and coats the beef and green onions evenly.

Step 7

Remove from heat and serve immediately. Pair it with steamed rice or cauliflower rice for a complete meal.
