  • 200 g Pitted dates
  • 250 ml Boiling water
  • 1 tsp Baking soda
  • 100 g Dairy-free butter or margarine
  • 150 g Brown sugar
  • 1 tsp Vanilla extract
  • 2 pcs Large eggs
  • 200 g All-purpose flour
  • 1 tsp Baking powder
  • 0.25 tsp Salt
  • 150 ml Dairy-free cream or coconut cream
  • 120 g Brown sugar (for caramel sauce)
  • 50 g Dairy-free butter or margarine (for caramel sauce)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease and line an 8-inch square baking dish with parchment paper.

Combine the pitted dates and boiling water in a heatproof bowl. Stir in the baking soda and let it sit for 10 minutes to soften the dates.

Using a blender or food processor, puree the date mixture until smooth. Set aside.

In a large mixing bowl, cream together the dairy-free butter or margarine and brown sugar until light and fluffy. Mix in the vanilla extract.
