Ingredients

  • 1 cup Gram flour (besan)
  • 2 tablespoons Semolina (optional, for texture)
  • 1 cup Water
  • 1 teaspoon Ginger paste
  • 1 teaspoon Green chili paste
  • 0.25 teaspoon Turmeric powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Eno (fruit salt) or baking soda
  • 1 tablespoon Oil
  • 0.5 teaspoon Black mustard seeds
  • 8 leaves Curry leaves
  • 2 pieces Green chilies (slit)
  • 2 tablespoons Water (for tempering)
  • 2 tablespoons Chopped coriander leaves (for garnish)
  • 1 tablespoon Grated coconut (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine gram flour, semolina (if using), turmeric powder, salt, and sugar. Mix well.

Step 2

Gradually add water while whisking to create a smooth, lump-free batter.

Step 3

Stir in ginger paste, green chili paste, and lemon juice. Mix well and let the batter rest for 10 minutes.

Step 4

While the batter rests, prepare a steamer and grease a round or square steaming tray with a little oil.

Step 5

Just before steaming, add Eno (or baking soda) to the batter and gently mix. The batter will become airy and light. Do not overmix.

Step 6

Immediately pour the batter into the greased tray and place it in the steamer. Steam on medium heat for 15-20 minutes or until a toothpick inserted into the dhokla comes out clean.

Step 7

Remove the tray from the steamer and let it cool for a few minutes before slicing the dhokla into squares or diamond-shaped pieces.

Step 8

For tempering, heat oil in a small pan. Add mustard seeds and let them splutter. Add curry leaves and slit green chilies, sautéing briefly. Add 2 tablespoons of water to the tempering and immediately pour it over the sliced dhokla.

Step 9

Garnish with chopped coriander leaves and grated coconut, if using.

Step 10

Serve warm or at room temperature with chutney or as a snack by itself.
