Ingredients

  • 1 block (14 oz) Extra-firm tofu
  • 2 tablespoons Lemon juice
  • 1 tablespoon Apple cider vinegar
  • 3 tablespoons Nutritional yeast
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 1 tablespoon Olive oil
  • 3 cups Fresh baby spinach
  • 0.25 cup Sun-dried tomatoes (packed in oil)
  • 2 cloves Garlic cloves, minced
  • 4 tortillas Whole-grain tortillas

Directions

Step 1

Press the block of tofu to remove excess liquid: Wrap it in a clean kitchen towel and place a heavy object on top for about 10 minutes.

Step 2

While the tofu is being pressed, prepare the tofu 'feta' marinade by combining lemon juice, apple cider vinegar, nutritional yeast, garlic powder, and salt in a small bowl.

Step 3

After pressing, crumble the tofu into small, feta-sized pieces into the marinade. Toss well to coat evenly and set aside to marinate for at least 10 minutes.

Heat a large non-stick skillet over medium heat. Add a tablespoon of olive oil.

Sauté the minced garlic until fragrant, about 30 seconds.

Add the baby spinach to the skillet, stirring until wilted, about 2–3 minutes.

Chop the sun-dried tomatoes and add them to the spinach mixture. Stir to combine, then remove the skillet from heat.

Lay out a tortilla on a flat surface. Add about 1/4 of the tofu 'feta', spinach mixture, and sun-dried tomatoes to the center of the tortilla.

Fold in the sides of the tortilla, then roll it tightly into a wrap.

Step 10

Repeat with the remaining tortillas and filling.

Step 11

Optional: Heat the wraps in the skillet for 1–2 minutes on each side to lightly toast them.

Step 12

Serve warm or wrap in parchment paper to store for later.
