Ingredients

  • 4 pieces Spinach wraps (dairy-free)
  • 2 cups Fresh baby spinach
  • 1 medium Red bell pepper
  • 1 medium Cucumber
  • 1 medium Carrot
  • 1 large Avocado
  • 0.5 cup Dairy-free hummus
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and prepare all produce: rinse the baby spinach, julienne the bell pepper, cucumber, and carrot into thin strips.

Step 2

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth and mix in lemon juice, salt, and black pepper to taste.

Step 3

Spread 2 tablespoons of dairy-free hummus evenly over one side of each spinach wrap.

Step 4

Layer a handful of fresh baby spinach leaves, the julienned vegetables (bell pepper, cucumber, and carrot), and mashed avocado onto the tortillas.

Step 5
