  • 4 pieces Large flour tortilla (dairy-free)
  • 4 cups Spinach (fresh)

  • 1 cup Cherry tomatoes (halved)
  • 1 small Cucumber (thinly sliced)
  • 1 cup Hummus (dairy-free)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the minced garlic and sliced red onion to the skillet. Cook for 2-3 minutes until the onion is translucent and fragrant.

Add the fresh spinach to the skillet and cook for another 2-3 minutes, stirring occasionally, until wilted. Season with salt and black pepper. Remove the skillet from heat and set aside.
