Ingredients

  • 4 cups Fresh spinach
  • 1 cup Rolled oats (gluten-free, if needed)

  • 6 tablespoons Water
  • 1 medium Yellow onion, finely diced
  • 2 cloves Garlic cloves, minced
  • 3 tablespoons Nutritional yeast
  • 1 cup Almond flour
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Ground nutmeg

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a small bowl, combine the ground flaxseed and water. Stir and let it sit for 5 minutes to form a flax egg.

Step 3

Meanwhile, chop the fresh spinach finely. You can use a food processor to make this step quicker, but avoid turning it into a puree.

Step 4

In a large mixing bowl, combine the chopped spinach, rolled oats, diced onion, minced garlic, nutritional yeast, almond flour, olive oil, salt, black pepper, and nutmeg.
