Ingredients

  • 1 sheet (pre-rolled, store-bought or homemade) Dairy-free puff pastry
  • 2 cups Baby spinach
  • 1 cup (crumbled) Dairy-free feta cheese
  • 2 cloves (minced) Garlic
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Unsweetened almond milk

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Step 3

Add the baby spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and black pepper, then remove from heat and let it cool slightly.

Step 4

In a mixing bowl, combine the cooked spinach and crumbled dairy-free feta cheese.

Step 5

Unroll the dairy-free puff pastry sheet on a lightly floured surface. Cut it into 6 equal triangles.

Step 6

Place a spoonful of the spinach and feta mixture at the wide end of each triangle. Roll the pastry towards the pointed end to form a croissant shape. Gently curve the ends inward to create a crescent shape.

Step 7

Transfer the croissants to the prepared baking sheet. Brush the tops with unsweetened almond milk to help them achieve a golden-brown color.

Step 8

Bake in the preheated oven for 18-20 minutes or until the croissants are flaky and golden brown.

Step 9

Let the croissants cool slightly before serving. Enjoy warm or at room temperature!
