Ingredients

  • 12 oz Penne pasta (or any pasta of choice)

  • 0.75 cup Raw cashews, soaked for 2-4 hours
  • 2 tablespoons Lemon juice
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Dairy-free mozzarella cheese (optional for garnish)
  • 0.5 teaspoon Red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
