Ingredients

  • 500 grams Mutton (bone-in or boneless, as preferred)
  • 3 tablespoons Cooking oil (e.g., coconut oil, sunflower oil, or vegetable oil)
  • 2 medium Onion (thinly sliced)
  • 6 cloves Garlic (minced)
  • 1 tablespoon Ginger (grated)
  • 2 pieces Green chilies (slit lengthwise)
  • 0.5 teaspoon Turmeric powder
  • 1.5 teaspoons Red chili powder
  • 2 teaspoons Coriander powder
  • 1 teaspoon Black pepper powder
  • 1 teaspoon Garam masala
  • 10 pieces Curry leaves
  • 2 medium Tomatoes (finely chopped)
  • 1 cup Water
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro (chopped, for garnish)

Directions

Step 1

Wash the mutton pieces thoroughly under cold water and pat them dry. Set aside.

Step 2

Heat 2 tablespoons of cooking oil in a heavy-bottomed pan or wok over medium heat.

Step 3

Add the sliced onions and sauté until golden brown, about 6-8 minutes.

Step 4

Stir in the minced garlic, grated ginger, and slit green chilies. Cook for another 2 minutes until fragrant.

Step 5

Add the turmeric powder, red chili powder, coriander powder, and black pepper powder. Mix the spices well with the sautéed onions and aromatics.

Step 6

Add the chopped tomatoes and salt. Cook until the tomatoes become soft and the oil begins to separate from the mixture, about 5-7 minutes.

Add the mutton pieces to the pan and stir well to coat them in the spice mixture.

Cover and cook the mutton on medium heat for 10 minutes, stirring occasionally.

Pour in 1 cup of water and add the curry leaves. Cover again and let the mutton simmer on low heat for 20-25 minutes, stirring occasionally, until the mutton is tender and the liquid is mostly absorbed.

Check for seasoning and adjust salt if necessary. Stir in the garam masala and cook for another 2 minutes.

Heat the remaining 1 tablespoon of cooking oil in a small pan. Add it over the mutton fry for extra flavor.

Garnish with freshly chopped cilantro and serve hot with steamed rice, flatbreads, or as a standalone dish.
