  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped (for garnish)
  • 0.25 cup water (if needed to thin sauce)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the dairy-free spaghetti according to the package instructions until al dente. Drain and set aside.

While the pasta is cooking, trim any excess fat from the chicken breasts and season them on both sides with a pinch of salt and pepper.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken breasts and cook for 5-7 minutes per side, or until fully cooked (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet, let it rest for 5 minutes, then slice it into thin strips.
