Bring a large pot of salted water to a boil. Cook the dairy-free spaghetti according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
Heat olive oil in a large skillet or saucepan over medium heat.
Add the sausage to the pan. Break it up into small pieces with a wooden spoon and cook until browned and fully cooked, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside.
In the same pan, add the diced onion. Sauté for 3-4 minutes until softened.
Add the minced garlic and cook for 1 minute until aromatic.
Add the diced red bell pepper and zucchini to the pan. Cook for 5-6 minutes, stirring occasionally, until the vegetables have softened.
