Ingredients

  • 120 grams Active sourdough starter
  • 240 milliliters Warm water
  • 30 milliliters Olive oil
  • 500 grams All-purpose flour
  • 10 grams Salt
  • 10 grams Maple syrup or sugar

Directions

Step 1

In a large mixing bowl, combine the active sourdough starter, warm water, olive oil, and maple syrup (or sugar). Stir until well mixed.

Step 2

Gradually add the all-purpose flour and salt to the bowl. Stir until the mixture comes together to form a shaggy dough.

Step 3

Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. Alternatively, you can knead the dough using a stand mixer with a dough hook for about 5-7 minutes.

Step 4

Form the dough into a ball and place it in a lightly greased bowl. Cover the bowl with a damp towel or plastic wrap, and let it rest at room temperature for 4-6 hours, or until the dough has doubled in size.

Step 5

Once doubled, punch down the dough and turn it out onto a floured surface. Divide the dough into 12 equal pieces (roughly 70 grams each). Shape each piece into a smooth ball.

Step 6

Place the dough balls onto a greased or parchment-lined baking sheet, spacing them a couple of inches apart. Cover loosely with a damp towel and let them proof for an additional 1-2 hours, or until they are puffy and slightly risen.

Step 7

Preheat your oven to 400°F (200°C). Once preheated, bake the rolls for 20-25 minutes, or until golden brown on top.

Step 8

Remove the rolls from the oven and let them cool on a wire rack. Serve warm or at room temperature. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
