In a large mixing bowl, combine the active sourdough starter, warm water, olive oil, and maple syrup (or sugar). Stir until well mixed.
Gradually add the all-purpose flour and salt to the bowl. Stir until the mixture comes together to form a shaggy dough.
Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. Alternatively, you can knead the dough using a stand mixer with a dough hook for about 5-7 minutes.
Form the dough into a ball and place it in a lightly greased bowl. Cover the bowl with a damp towel or plastic wrap, and let it rest at room temperature for 4-6 hours, or until the dough has doubled in size.
