Ingredients

  • 3.5 cups All-purpose flour
  • 2.25 teaspoons Instant yeast
  • 1.5 cups Warm water (110°F to 115°F)
  • 1 tablespoon Brown sugar
  • 1 teaspoon Salt
  • 0.5 cup Baking soda
  • 4 cups Water (for soda bath)
  • 2 tablespoons Olive oil
  • 2 tablespoons Coarse sea salt (for topping)

Directions

Step 1

In a large mixing bowl, combine warm water, instant yeast, and brown sugar. Stir until yeast dissolves and let sit for 5 minutes or until the mixture is foamy.

Step 2

Add the salt and 2 tablespoons of olive oil to the yeast mixture. Gradually mix in the all-purpose flour, one cup at a time, stirring after each addition, until the dough begins to pull away from the sides of the bowl.

Step 3

Knead the dough on a lightly floured surface for about 5 minutes until it is smooth and elastic.

Step 4

Lightly grease a large bowl with olive oil. Place the dough in the bowl, cover it with a clean kitchen towel, and let it rise in a warm area for 1 hour or until it has doubled in size.

Step 5

Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper and set aside.

Step 6

In a medium saucepan, bring 4 cups of water and 0.5 cup of baking soda to a boil, then reduce to a simmer.

Step 7

Punch down the risen dough and divide it into 4 equal parts. Roll each part into a rope about 12 inches long.

Step 8

Cut each rope into small bite-sized pieces, about 1 to 1.5 inches long.

Step 9

Using a slotted spoon, carefully dip each piece into the simmering baking soda water for about 20 seconds, then remove and place on the prepared baking sheets.

Step 10

Brush the tops of each pretzel bite lightly with olive oil and sprinkle with coarse sea salt.

Step 11

Bake in the preheated oven for 12-15 minutes or until the tops are beautifully golden brown.

Step 12

Remove from oven and let cool slightly on a wire rack before serving. Enjoy your dairy-free soft pretzel bites!
