Directions

Step 1

Boil the diced potatoes in 2 cups of water until tender, about 10-15 minutes. Drain, reserving 1 cup of the potato cooking water.

Mash the potatoes until smooth. Allow mashed potatoes and reserved water to cool to warm temperature.

In a large mixing bowl, dissolve the yeast and sugar in the reserved potato water. Let stand until bubbly, about 5 minutes.

Mix in the mashed potatoes, coconut milk, and olive oil until well combined.
