  • 4 medium Yukon Gold potatoes
  • 2 tablespoons Olive oil
  • 1 large Yellow onion

  • 2 cups Vegetable broth
  • 1 cup Coconut milk

  • 2 tablespoons Cornstarch
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Smoked paprika
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Wash and thinly slice the Yukon Gold potatoes into approximately 1/4-inch slices. Set aside.
