  • 500 grams jackfruit (young, canned or fresh)
  • 3 tablespoons coconut oil
  • 1 large red onion
  • 4 garlic cloves
  • 1 green chili pepper
  • 1 red chili pepper
  • 4 tablespoons soy sauce
  • 2 lime
  • 1 teaspoon black pepper
  • 0.5 teaspoon salt
  • 200 grams tofu (extra firm)
  • 3 stalks spring onions
  • 2 tablespoons apple cider vinegar

Directions

Step 1

Begin by draining the canned jackfruit or peeling and removing seeds from the fresh jackfruit. Shred the jackfruit into smaller pieces.

Step 2

Heat 2 tablespoons of coconut oil in a large pan over medium heat.

Step 3

Dice the red onion and mince the garlic cloves. Add them to the pan and sauté until the onion becomes translucent.

Chop the green and red chili peppers; add them to the pan and continue to cook for another minute.

Step 5

Add the shredded jackfruit to the pan, stirring well to combine with the onions and garlic.

Pour in the soy sauce, juice from 1 lime, black pepper, and salt. Mix thoroughly.
