Ingredients

  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Carom seeds (Ajwain)
  • 0.5 teaspoon Red chili powder
  • 0.25 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 0 as needed Water
  • 2 tablespoons Vegetable oil
  • 0 for cooking the kokis Oil or vegetable ghee

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour, finely chopped onion, green chili, cilantro, cumin seeds, carom seeds, red chili powder, turmeric powder, and salt.

Add 2 tablespoons of vegetable oil to the flour mixture and mix well until the oil is evenly distributed.

Gradually add water, a little at a time, and knead the mixture to form a soft, pliable dough. The dough should not be too hard or too sticky. Adjust the water amount as necessary.

Once the dough is ready, cover it with a damp cloth and let it rest for about 10 minutes.
