Ingredients

  • 2 pieces large globe artichokes
  • 1 piece lemon
  • 2 pieces garlic cloves
  • 1 piece bay leaf
  • 1 teaspoon salt
  • 1 teaspoon black peppercorns
  • 1 tablespoon olive oil
  • 1 tablespoon optional fresh parsley, chopped

Directions

Step 1

Begin by preparing the artichokes. Using a sharp knife, cut off the top 1 inch of each artichoke to remove the tough, thorny tips. Trim the stem to about 1 inch in length.

Step 2

Remove the outermost layer of tough leaves at the base and use kitchen scissors to trim the pointy tips of the remaining leaves.

Step 3

Slice the lemon in half and rub the cut surfaces of the artichokes with one half of the lemon to prevent browning. Set the lemon aside for cooking.

Peel and smash the garlic cloves.

In a large pot, bring about 2 inches of water to a boil. Add the salt, black peppercorns, bay leaf, the smashed garlic cloves, and the lemon halves to the boiling water.
