  • 12 pieces jumbo shrimp, peeled and deveined

  • 1 clove garlic, minced
  • 1 medium cucumber, thinly sliced
  • 1 large avocado, sliced
  • 1 medium red bell pepper, julienned
  • 1 medium carrot, julienned
  • 2 pieces scallions, chopped
  • 1 tablespoon sesame seeds
  • 2 sheets nori sheets, cut into thin strips

Directions

Step 1

Start by cooking the jasmine rice. Rinse 1 cup of jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 12-15 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork before serving.

While the rice is cooking, marinate the shrimp. In a small bowl, whisk together 3 tablespoons of soy sauce, 2 teaspoons of sesame oil, 1 tablespoon of honey, 2 tablespoons of rice vinegar, 1 teaspoon of grated fresh ginger, and 1 minced garlic clove.
