Ingredients

  • 12 ounces Penne pasta (or pasta of your choice)
  • 1 pound Large shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 2 cups Unsweetened almond milk
  • 1 cup Nutritional yeast
  • 1 cup Dairy-free cream cheese
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for about 1 minute until fragrant.

Step 3

Add the shrimp to the skillet and cook for 2-3 minutes on each side, or until the shrimp turns pink and opaque. Remove the shrimp from the skillet and set aside.

Step 4

In the same skillet, add the unsweetened almond milk and bring it to a gentle simmer.

Step 5

Whisk in the nutritional yeast and dairy-free cream cheese until the mixture is smooth and creamy.

Step 6

Stir in the lemon juice, salt, and ground black pepper. Continue to cook the sauce for 3-5 minutes until it thickens slightly.

Step 7

Return the cooked shrimp to the skillet and add the drained pasta. Toss everything together until the pasta and shrimp are well coated with the Alfredo sauce.

Step 8

Garnish with fresh parsley and red pepper flakes, if using.

Step 9

Serve immediately and enjoy your dairy-free shrimp Alfredo pasta.
