Ingredients

  • 1 cup semolina (sooji/rava)
  • 0.25 cup coconut oil
  • 0.75 cup sugar
  • 1.5 cups water
  • 0.5 cup almond milk
  • 4 pods cardamom pods
  • 0.5 teaspoon saffron strands
  • 0.25 cup chopped nuts (cashews, almonds)
  • 0.25 cup raisins
  • 0.25 teaspoon salt

Directions

Step 1

Begin by lightly crushing the cardamom pods to release their flavor.

Step 2

In a heavy-bottomed pan, heat 1 tablespoon of coconut oil over medium heat. Add the chopped nuts and raisins, frying them until the nuts are golden and the raisins are plump and set them aside.

Step 3

In the same pan, add the remaining coconut oil and semolina. Roast the semolina over low-medium heat, stirring continuously to prevent burning, until it turns golden brown and emits a nutty aroma. This process should take about 10-12 minutes.

Step 4

Meanwhile, in another saucepan, bring water, almond milk, sugar, saffron strands, and salt to a gentle boil. Stir to dissolve the sugar completely.

Step 5

Once the semolina is roasted, slowly introduce the boiled liquid mixture to the roasted semolina in the pan, stirring continuously to avoid lumps.

Step 6

Add the crushed cardamom pods to the mixture.

Step 7

Stir continuously as the semolina absorbs the liquid and begins to thicken. Reduce the heat to low and allow it to cook for another 5-7 minutes, until the mixture thickens to your desired consistency.

Step 8

Add the fried nuts and raisins back into the sheera, reserving a few for garnishing.

Step 9

Mix well, ensuring the nuts and raisins are well distributed throughout the sheera.

Step 10

Serve the dairy-free sheera warm, garnished with the reserved nuts and raisins. Enjoy!
