Ingredients

  • 500 g All-purpose flour
  • 7 g Instant yeast
  • 10 g Sugar
  • 5 g Salt
  • 300 ml Warm water
  • 60 ml Olive oil
  • 400 g Ground beef or lamb
  • 1 medium Onion, finely chopped
  • 30 g Tomato paste
  • 50 g Pine nuts
  • 10 g Sumac
  • 5 g Allspice
  • 3 g Ground cinnamon
  • 30 ml Lemon juice
  • 5 g Salt, for filling
  • 5 g Black pepper, for filling

Directions

Step 1

In a mixing bowl, combine the all-purpose flour, instant yeast, sugar, and salt.

Step 2

Add warm water and olive oil to the dry ingredients and mix until a dough forms.

Step 3

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 5

While the dough is rising, prepare the filling. In a large skillet, heat a little olive oil over medium heat.

Add the chopped onion and sauté until translucent. Add the ground beef or lamb and cook until browned.

Stir in the tomato paste, pine nuts, sumac, allspice, ground cinnamon, lemon juice, salt, and black pepper. Cook for another 5 minutes, then set aside to cool.
