Ingredients

  • 500 grams all-purpose flour
  • 2 teaspoons active dry yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 300 milliliters warm water
  • 4 tablespoons olive oil
  • 500 grams ground beef or lamb
  • 1 large onion, finely chopped
  • 1 medium tomato, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground allspice
  • 1 teaspoon paprika
  • 50 grams pine nuts
  • 0.5 cup parsley, chopped
  • 1 tablespoon lemon juice
  • 0.5 teaspoon black pepper

Directions

Step 1

In a large bowl, mix the flour, yeast, sugar, and salt together. Gradually add the warm water and 2 tablespoons of olive oil, mixing until a dough forms. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.

Step 2

Place the dough in a lightly oiled bowl and cover with a damp cloth. Let it rise in a warm place for about 1 hour, or until it has doubled in size.

Step 3

Meanwhile, prepare the filling. In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 5 minutes until softened.

Punch down the risen dough and divide it into 16 equal pieces. Roll each piece into a ball and then flatten each ball into a circle approximately 10 cm in diameter.

Place a heaping tablespoon of the meat mixture in the center of each dough circle. Pinch the edges together to form a triangular shape, leaving a small opening at the top.

Step 9

Arrange the sfihas on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until the dough is cooked and lightly golden.
