Ingredients

  • 4 large eggs
  • 0.25 cup plain unsweetened almond milk
  • 0.5 cup dairy-free cheese shreds
  • 1 cup fresh spinach
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup cherry tomatoes, halved
  • 2 tablespoons chopped chives (optional, for garnish)

Directions

Step 1

In a medium bowl, crack the eggs and add the almond milk. Whisk the mixture thoroughly until the eggs are fully beaten and the almond milk is incorporated.

Step 2

Season the egg mixture with salt and black pepper. Set aside.

Step 3

Heat the olive oil in a non-stick skillet over medium heat.

Step 4

Add the fresh spinach to the skillet and sauté for about 1-2 minutes, until the spinach has wilted.

Step 5

Pour the egg mixture into the skillet with the wilted spinach and allow it to cook undisturbed for about 30 seconds, until it begins to set at the edges.

Step 6

Using a spatula, gently stir the eggs, folding from the edges to the center to create large, soft curds.

Step 7

After about 2 minutes of cooking, sprinkle the dairy-free cheese shreds and halved cherry tomatoes evenly over the eggs.

Step 8

Continue to cook the eggs, folding gently, until they reach your desired level of doneness and the cheese starts to melt, about 2-3 more minutes.

Step 9

Remove from heat and serve immediately, garnished with chopped chives if desired.
