  • 0.5 medium red bell pepper
  • 0.5 medium green bell pepper
  • 0.25 medium onion
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Crack the eggs into a medium-sized bowl. Add unsweetened almond milk, salt, and black pepper. Whisk until well combined and slightly frothy.

Remove from heat and sprinkle with freshly chopped parsley.

Step 10

Serve immediately, garnished with additional parsley if desired.
