Ingredients

  • 6 cups crispy rice cereal
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1 cup dairy-free semi-sweet chocolate chips
  • 1 cup dairy-free butterscotch chips
  • 1 teaspoon vanilla extract

Directions

Step 1

Grease a 9x13 inch baking dish with cooking spray or line it with parchment paper for easy removal later.

Step 2

In a large saucepan over medium heat, combine the granulated sugar and light corn syrup. Stir consistently until the mixture just starts to boil.

Step 3

Remove the saucepan from the heat and immediately mix in the creamy peanut butter and vanilla extract. Stir until smooth and fully combined.

Step 4

Add the crispy rice cereal to the saucepan and gently fold the mixture until the cereal is evenly coated.

Step 5

Press the cereal mixture into the prepared baking dish evenly using a spatula or the back of a spoon. Set aside.

Step 6

In a microwave-safe bowl or using a double boiler, melt the dairy-free chocolate chips and butterscotch chips together. Stir until the mixture is smooth and well-combined.

Step 7

Pour the chocolate-butterscotch mixture over the pressed cereal in the dish. Spread the topping evenly using a spatula.

Step 8

Let the bars cool at room temperature for about 15 minutes, then transfer to the refrigerator for approximately 30 minutes or until the topping is set.

Step 9

Once set, slice into squares or bars and serve. Store any leftovers in an airtight container at room temperature or in the refrigerator.
