Ingredients

  • 20 pieces dried red chilies
  • 8 pieces garlic cloves
  • 1 inch fresh ginger
  • 3 stalks spring onions
  • 4 tablespoons vegetable oil
  • 2 tablespoons vinegar
  • 2 tablespoons soy sauce
  • 3 tablespoons tomato ketchup
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup water

Directions

Step 1

Remove the stems of the dried red chilies and soak them in hot water for about 30 minutes until they soften.

Step 2

Drain the chilies and grind them into a smooth paste, adding a little water if necessary.

Step 3

Finely chop the garlic, ginger, and spring onions, keeping the white and green parts of the spring onions separate.

Step 4

Heat the vegetable oil in a pan over medium heat. Add the finely chopped garlic, ginger, and the white parts of the spring onions. Sauté until fragrant and golden brown.

Add the red chili paste to the pan and cook for about 5 minutes until the raw smell of the chilies disappears.

Stir in the vinegar, soy sauce, tomato ketchup, salt, and sugar. Mix well and cook for another 3-4 minutes.

Add the water and continue cooking until the sauce thickens to your desired consistency, about 5 minutes.
