Ingredients

  • 2 sheets dairy-free puff pastry sheets
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 5 cups fresh spinach, washed and chopped
  • 1 cup dairy-free feta cheese, crumbled
  • 2 tablespoons nutritional yeast
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh dill, chopped
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons plain non-dairy milk

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 4-5 minutes until softened.

Step 3

Add minced garlic to the skillet and cook for another minute, stirring frequently to prevent burning.

Step 4

Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
