Ingredients

  • 500 grams All-purpose flour
  • 2.25 teaspoons Active dry yeast
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 250 milliliters Warm water
  • 60 milliliters Olive oil
  • 400 grams Dairy-free sausage
  • 1 small Onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Soy sauce
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 1 Egg substitute or flax egg for glaze

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, active dry yeast, sugar, and salt.

Step 2

Slowly pour in the warm water and olive oil. Stir until a rough dough forms.

Step 3

Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for about 1 hour, until doubled in size.

Step 5

Meanwhile, prepare the sausage filling. Heat a skillet over medium heat and add the dairy-free sausage, breaking it into small pieces as it cooks.

Step 6

Add the chopped onion to the skillet and sauté for 3-4 minutes until soft.

Step 7

Stir in the minced garlic, soy sauce, black pepper, and fresh parsley. Cook for another 2-3 minutes, then remove from heat and let it cool slightly.

Step 8

Once the dough has risen, punch it down and divide it into 12 equal pieces.

Step 9

Flatten each piece into a circle and place a heaping tablespoon of the sausage mixture in the center.

Step 10

Carefully gather the edges of the dough circle and pinch them together to seal the filling inside. Shape the bun into a neat ball.

Step 11

Place the buns, seam side down, on a baking sheet lined with parchment paper.

Step 12

Cover the buns with a cloth and let them rest for 20 minutes.

Step 13

Preheat your oven to 180°C (350°F). Brush the tops of the buns with your chosen egg substitute or flax egg for a glossy finish.

Step 14

Bake the buns in the preheated oven for 20-25 minutes, or until golden brown.

Step 15

Remove from oven and let the buns cool on a wire rack before serving.
