Ingredients

  • 2 pieces boneless, skinless chicken breasts

  • 3 cloves garlic cloves, minced

  • 1 medium red bell pepper, diced
  • 1 medium zucchini, diced
  • 1.5 cups broccoli florets
  • 1.5 cups long-grain rice
  • 3 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and season them with salt and black pepper.

In a large skillet or sauté pan, heat 1 tablespoon of olive oil over medium heat. Add the chicken pieces and cook until they are browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
