  • 28 ounces canned diced tomatoes
  • 3 cups vegetable broth
  • 2 cups brown rice
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley, chopped
  • 1 bay leaf
  • 2 tablespoons lemon juice

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion and cook for 3-4 minutes until softened.

Step 2

Add the minced garlic, diced bell peppers, diced zucchini, and sliced carrots to the pot. Continue to cook for another 5 minutes, stirring occasionally.

Stir in the canned diced tomatoes and vegetable broth. Bring the mixture to a simmer.
