Ingredients

  • 4 large eggs
  • 1 cup, shredded cooked pork shoulder
  • 1 tablespoon olive oil
  • 0.5 cup, diced green bell pepper
  • 0.25 cup, finely chopped red onion
  • 1 cup, chopped fresh spinach
  • 2 cloves, minced garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons coconut milk
  • 1 tablespoon, chopped fresh chives

Directions

Step 1

Crack the eggs into a bowl and whisk together with the coconut milk, salt, and black pepper until well combined. Set aside.

Step 2

Heat the olive oil in a non-stick skillet over medium heat.

Step 3

Add the diced green bell pepper and chopped red onion to the skillet and sauté for about 3 minutes until softened.

Step 4

Add the minced garlic and shredded pork, stirring frequently for another 2 minutes until the pork is heated through and the garlic is fragrant.

Step 5

Add the chopped spinach to the skillet and cook for an additional 1 minute until just wilted.

Step 6

Pour the egg mixture evenly over the cooked vegetables and pork in the skillet.

Step 7

Allow the omelette to cook undisturbed for about 3-4 minutes, or until the bottom is set but the top is still slightly runny.

Step 8

Using a spatula, carefully fold the omelette in half and continue to cook for another minute until the eggs are fully set.

Step 9

Transfer the omelette to a serving plate, garnish with fresh chopped chives, and serve immediately.
