Ingredients

  • 500 grams Cremini or button mushrooms
  • 2 tablespoons Olive oil
  • 1 medium, finely chopped Onion
  • 3 minced Garlic cloves
  • 60 grams Oat flour
  • 2 tablespoons Ground flaxseed
  • 3 tablespoons Water
  • 2 tablespoons Soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Salt
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Clean the mushrooms with a damp cloth and finely chop them.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 3

Add the finely chopped onions and sauté for about 3-4 minutes until they become translucent.

Step 4

Add the minced garlic and continue to sauté for another 1 minute until fragrant.

Step 5

Add the chopped mushrooms to the skillet. Cook them for approximately 10 minutes, or until they have released their moisture and are golden brown.

Step 6

Transfer the cooked mushroom mixture to a large mixing bowl and allow it to cool for a few minutes.

Step 7

While the mushrooms are cooling, combine the ground flaxseed and water in a small bowl and set aside. This will serve as a binding agent.

Step 8

Once the mushroom mixture is slightly cool, add the oat flour, flaxseed mixture, soy sauce, Dijon mustard, smoked paprika, black pepper, salt, and fresh parsley.

Step 9

Mix all the ingredients together until well combined and can be formed into patties.

Step 10

Divide the mixture into 4 equal portions and shape them into patties.

Step 11

In the same skillet, heat the remaining tablespoon of olive oil over medium heat.

Step 12

Place the patties in the skillet and cook for about 4-5 minutes on each side, or until they are browned and firm.

Step 13

Serve the savory mushroom patties warm. They can be enjoyed as a burger patty in a bun with toppings of your choice or on their own as a main dish.
