Ingredients

  • 500 g ground beef or pork
  • 1 medium onion, finely chopped
  • 1 medium carrot, grated
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 250 g gluten-free puff pastry
  • 1 large egg, beaten

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

In a large pan over medium heat, add olive oil. Once hot, sauté onion and garlic until translucent, about 5 minutes.

Step 3

Add the grated carrot and cook for another 3 minutes until slightly softened.

Step 4

Add ground meat, breaking it apart with a spoon, and cook until browned, about 7-10 minutes.

Step 5

Stir in chopped parsley, thyme, salt, and black pepper. Remove from heat and allow to cool slightly.

Roll out the gluten-free puff pastry on a lightly floured surface into a rectangle, approximately 30x25 cm (12x10 inches).

Spoon the meat mixture along one long edge of the pastry, leaving about an inch from the edge.

Brush the exposed edge of the pastry with beaten egg.

Carefully roll the pastry over the filling, starting from the filled edge, to form a log.

Seal the edge of the roll by pinching the pastry together.

Transfer the roll to the prepared baking sheet, seam-side down. Brush the top with more beaten egg.

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and cooked through.

Allow to cool slightly before slicing. Serve warm.
