Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 0.5 cup olive oil
  • 0.5 cup cold water
  • 1 pound ground beef or lamb
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 egg, beaten (for egg wash, optional)

Directions

Step 1

1. Prepare the pastry dough: In a large bowl, combine 2 cups of all-purpose flour and 1 teaspoon of salt. Gradually mix in 0.5 cup of olive oil using a fork until the mixture resembles coarse crumbs.

Step 2

2. Stir in 0.5 cup of cold water, a little at a time, mixing until a smooth dough forms. If the dough is too sticky, add a bit more flour. If it's too dry, add a bit more water.

Step 3

3. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to let it rest.

Step 4

4. Meanwhile, prepare the filling: In a skillet over medium heat, cook 1 pound of ground meat (beef or lamb) until browned and fully cooked, about 5-7 minutes. Drain any excess fat.

Step 5

5. Add the finely chopped onion and minced garlic, and cook until the onion is soft and translucent, about 3-4 minutes.

Step 6

6. Stir in 1 teaspoon each of ground cumin and ground coriander, 0.5 teaspoon of smoked paprika, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Cook for another 2 minutes or until the spices are fragrant.

Step 7

7. Remove from heat and stir in the chopped fresh parsley. Let the filling cool slightly.

Step 8

8. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 9

9. Roll out the dough on a lightly floured surface to about 1/8-inch thickness. Use a round cutter (about 4 inches in diameter) to cut out circles of dough.

Step 10

10. Place about 1 to 1.5 tablespoons of the meat filling onto one half of each dough circle.

Step 11

11. Fold the other half over the filling to form a half-moon shape. Press the edges with a fork to seal.

Step 12

12. Arrange the pastries on the prepared baking sheet. Brush lightly with beaten egg if desired for a golden finish.

Step 13

13. Bake in the preheated oven for 20-25 minutes, until the pastries are golden brown and crispy.

Step 14

14. Allow to cool slightly before serving. These pastries can be enjoyed warm or at room temperature.
