Ingredients

  • 1 cup dry green or brown lentils
  • 3 cups water
  • 2 tablespoons olive oil

  • 1 medium carrot, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 cup chickpea flour
  • 0.25 cup fresh parsley, chopped
  • 2 tablespoons ground flaxseeds
  • 6 tablespoons water for flax egg

Directions

Step 1

Rinse the lentils under cold water, then place them in a medium saucepan with 3 cups of water. Bring to a boil over high heat, reduce to a simmer, cover, and cook for about 20 minutes or until the lentils are tender but not mushy. Drain and set aside to cool.

Step 2

While the lentils cook, prepare the flax egg by mixing the ground flaxseeds with 6 tablespoons of water in a small bowl. Stir well and let it sit for about 5-10 minutes to thicken.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated carrot, and continue to cook for another 3 minutes.
